This is an adaptation of one of those recipes handed out at grocery stores. It took me a while to get it just right for us. To lower the fat content since we're both diabetics and add in a few vegetables to add a healthy boost to the dish.
I love recipes you can change to fit whatever you've got on hand. I've made this with whole wheat spaghetti, rigatoni, macaroni and other pasta shapes. Calvin doesn't care which kind of pasta he gets, but I like it best with spaghetti.
Original instructions were to brush both sides of raw chicken tenders with mayonnaise. What a mess that turned out to be! So I tried lining the chicken tenders up on a paper towel and brushing the mayo on just one side, which worked well. I've also skipped the mayo altogether with little change in taste and a reduction in the fat content. So, it'll be your call. Click on the tab above "From My Kitchen" for the recipe.
